Aye Fey. A big haunfu uv ramsons wis yaised in a bean stew this week and young nettles huv awready been cooked an eaten.

The first crop uv rhubarb oot the gairdin hus been picked and geid away as weel.

Other fowk like roobarb but ah dinnae. Faur ower wersh for me.

Well my cup is runething over because today I ett the very first strawberry off ma strawberry plants what I grew myself for the very first time.

It was really nice!  Very Happy

I have never grown anything to eat before.

Here is a braw recipe fir those greens, like dandelion 'n sow thistle or water cress.
They are crispy yum & also healthy


You need

1 cup chana (chickpea) flour

1.5 tsp curry powder or cumin

½ tsp baking powder

½ tsp salt, or to taste

Big pinch chilli powder (optional)

2 cups foraged greens, finely chopped and loosely packed down.

2 tbsp grated onion

Water a drop

Oil


To make
Whisk dry ingredients together.

Add greens and grated onion.

Mix to a very thick batter. If necessary, add water to moisten slightly - but only slightly!
The dryer this batter the better. You should only need a few drops of water, if any.

Heat 1 cm oil in pan, on medium-high.

Dollop in a small spoonful of batter, push off with a fork & flatten a bit.

Turn and fry till golden brown on both sides.

Remove onto paper-towel-lined plate.

Serve with yoghurt, sauce or relish.

Makes a meal for 2 or a snack for 4.


If using bitter greens in Autumn ...

- like older dandelion leaves or wild mustard greens - boil them for 5-10 minutes and then leave to drain before chopping them and adding them to the batter. (You may even want to press some of the moisture out, so you don't risk ending up with an over-moist batter.)

I wouldn't like to hazard how many gallons of nettle soup I've made so far this year - nettle and sweet potato are good in the winter and nettle with parsley is great when the weather warms up a bit. I made a batch of nettle with burdock and parsley for a friend who was on chemo recently, because burdock helps revive lost apetite and she said it tasted great.

I made my first nettle and garlic mustard (Jack by the hedge) pesto this spring and have been feeding it to residents of "homes for elderly persons" in the last two herb talks I've given, along with dandelion flower syrup, last year's elderflower cordial and cleavers, mint and lemon balm tea. One woman was allergic to the taste of garlic and nearly threw up, another objected to drinking green tasteless water and a third was almost apoplectic that I was keeping her from her "real cup of tea", but I just smile and carry on regardless.

Anyone who comes to my workshops gets given sorrel, violet leaves, chickweed and dandelion leaves to eat. We make a forager's salad dressed with dandelion root vinegar (pickled dandelion roots taste great!) and sunflower oil. I've got chive flower infusing in vinegar at the moment, so it will be interesting to see how that turns out.

I was disappointed with this year's dandelion flower syrup - Mr Ygraine complained it tasted too much like grass, so I made a fresh batch with hawthorn blossom and red clover which tastes much better. I'm also waiting for the hawthorn blossom brandy to finish infusing - that's destined for Christmas brandy sauce with the pudding.

I found a whole bank full of wild green and bronze fennel in Exmouth last week, so a basketful of that is now infusing in vinegar, vodka and making a digestive liqueur with some finely chopped marjoram. In 8 weeks I can add some sugar and then forget it for the next 4 years. I shall have to make some more haw liqueur this autumn - the last lot was amazing and has been nearly finished (the old folks really liked that one!)

Och Ygraine yir ma idea uv super wumin soyeare.
Whit so many dinna understand is that most of these things contain about 10 to 20 times the neutritian of the stuff they can buy in shops.

The reason that most of it is not exploited is that it wilts fast & doesn't have a shelf life.
That's fantastic yea get fresh ivery dee not summit oot ov ra refrigerated coffin.

Those with poor health cuid help their ain recovery with all ov these.

Thir Free after awl, wir no askin yea ta buy sum high price embalmed shyte like those big budget adds do.

We did the sugar and rhubard stalks as well.  We called the newspaper cones "pokes".  

In the mountains of Idaho there are hundreds of plants that I used to gather and patches I used to nourish.  Down here in large town Texas I wouldn't touch anything wild because of the chemicals.  I won't even let my dog drink except from here own water dish wish is filled freshly each day.

Every night a truck comes by and sprays some hellish poison against the mosquitos.  I make damned sure my dog is in and her water dish turned upside down.

Ah've been oot pickin wild rose petals and have been making two different kinds of rose syrup with apothecary's rose and red garden roses -one with lemon juice and one with nettles. - wonderful stuff. Going to hopefully make a rose elixir next Saturday with rose petals, leaves, honey and brandy.

2. Advice appreciated... The shrub roses roon aboot the place have all now got hips. How d'ye / can ye grow them from the seeds....?

Look I dinnae ken the first thing aboot growing hings! And frankly I love roses so much - they're bloody lovely flooers -  that to me it seems difficult to believe (strange but true) that ye just take the seeds and plant them and ye end up with a rose bush!

Is that really all there is to it?? How easy would it be to get a plant out of rosehip seeds?? How much mollycoddlin do they need?

Huvin said at wance thur grawin awa thur hardy criiturs an ye dinna need tae be feart tae treat thum rough, ye need a firm haun atra prunin. Dinna gae plantin roses whaur ye've hud roses afore tho wioot changin ra topsoil entirely ur thull get sum kinna rot an die on ye.

Keep ra skins ora hips tho an mak jelly ur cordyull. A pun o ordnary sugar tae a pun o froot anna wee slice ay apple shuid dae it*. Nae shure aboot ra cordyull, it's bin a while an ah canny find ra receipt.

*strain it through a muslin an ye'll get a luvly clear rose pink preserve.
